Ah, how sweet it is. And what amazing properties it has.

What could be better? Well, using the Raw, Local Honey and adding organic herbs to capture and wonderful herbal properties in an accessible, powerful, delicious package.

Considered a healing agent for the millennia, honey has been found in archeological excavations of the ancient pyramids. And it is STILL edible and in perfect condition. No preservatives needed!

There are a couple of areas where we need to be careful. Never feed honey to babies under 12 months of age and don’t heat it past 95 degrees of you lose the medicinal benefits by the hundreds.

Although for many, sage only makes a grand appearance at Thanksgiving dressing. Sage honey, however, is one of my personal favorites for a variety of reasons. It is my first go-to when I feel a sore throat coming on. It is wonderful right off the spoon or stirred into tea with a splash of lemon for respiratory ailments or sore throat. It is also wonderful drizzled over steamed vegetables. Or just straight off the spoon as a soothing, Repeat 3-4 times a day.

To make this honey, it’s really easy.

Here’s all you need:

  • Squeaky clean 8-ounce jar and lid
  • A stir stick, perhaps a chopstick or salad fork
  • Saucepan that holds several inches of liquid

Ingredients:

  • 2 Tablespoons Organic Dried Sage Leaf
  • 1 cup Raw, Local (if possible) Honey

Directions:

Bring 3” of water almost to a boil in a saucepan. Remove the pan from the heat source and allow to cool a bit.

Place your Thyme (or any dried herb that you fancy) in the bottom of the jar. Pour the honey over the herb, to approximately 1/2” from the top of the jar.

Carefully set the jar in the pan of warm water, being careful not to splash any water into the jar. Hold the jar steady with one hand and stir the honey/herb mixture until the two are mixed.

Carefully place the lid on the jar and set in a warm place, perhaps a window sill. Daily, give the jar a little shake. Allow the honey to infuse for two weeks.

When ready to pour off, line a fine sieved strainer with a couple of layers of cheesecloth. Place over a bowl.
